Monasteries had the physical plant <em>(cellars),</em> but more important, they were the lone bastion of education, record keeping, and systematic learning during the Middle Ages. These monks had the time and generational experience to learn how different plots of vineyard land (and the types of grapes planted), produced unique wines.<br /><br />The <em>C&ocirc;te d'Or</em> (golden slope) of Burgundy contains many of the most famous and highly-regarded vineyards. Here it is individual vineyard sites that are "ranked" according to "quality." These rankings were implicit in the work of the monasteries, and have been codified within French law.<br /><br />In order of "quality":<br /><br />Wines which may come from anywhere, or produced from grapes grown in many different villages on the "Côte," or wines from certain "lesser" vineyards may only qualify for the general <em>Bourgogne</em> appellation.<br /><br /> Wine which comes from recognized villages that qualify, or are from vineyards within these towns that qualify, may carry the name of the town in which they're grown. In some cases it is permitted to put a vineyard name on the label as well. These are known as <em>"village wines."</em><br /><br /> Wine which grows in vineyards that qualify for <strong><em>Premier Cru </em></strong>(first growth) status will be named for the village and the specific vineyard in which it's grown.<em><br /><br /> </em>Wines grown in vineyards which qualify for<strong><em> <em>Grand Cru</em> </em></strong>(great growth) are rarely labeled with a town name, rather with the specific vineyard's name.<br /><br />It is important to know that not all "Premier Cru," or "Grand Cru" vineyards guarantee quality. Bad winegrowers in Grand Cru vineyards will produce bad wine. Good growers in vineyards that only <em>qualify</em> for <em>"village"</em> status will produce <strong>good</strong> wine.
