Nigori or “Cloudy Sake” is made unfiltered so that some of the rice lees remain in the bottle after pressing. The style is mild and creamy with a bright acidity which balances the slightly thick texture of the unfermented rice particles.

The word sake in Japanese actually refers to all things alcoholic. Westerners have adopted it to refer specifically to the clear and pure, fermented rice beverage that we are familiar with. The formal name for the brew known as refined sake is seishu, and the common name nihonshu (Japanese sake) is generally used to distinguish it from yoshu (western liquor), and regional sake is referred to as jizake.
Sake’s production, much like the product itself, is a direct extension of the ancient feudalistic social hierarchy that many people think of when they think of Japan and its culture. Traditionally, sake was brewed by farmers from the snowy countryside who had no income in the winter. These men would leave their families for six months at time and make the long trek to the sakagura (sake brewery) where they would brew sake from sunrise to sunset until spring.
The kurabito (sake brewery workers) would be under the jurisdiction of the toji (head brewer). The toji had an enormous obligation, as all of the sake brewed was ultimately his responsibility. The toji would work at the same sakagura every year until he, having passed on his skills and wisdom to the kurabito, eventually selected a pupil who passed up the ranks as he did, to replace him.
The style of sake specific to a certain region will often reflect the cuisine, available materials, and climate of that region, not unlike the classic wine regions of Europe. Longstanding relationships of food, people and their environment are at the core of each region’s traditional jizake.
