
Still getting used to the new induction cooktop, as Susan and I put it to use last night for another round of really good pork, pan-seared (which led to a little smoke in the kitchen ’till I remembered the high-powered ventilation system that sounds like a 747, but “gets the job done”), with tomato and garlic-infused mashed potatoes and cooked arugula.
This delicious dinner was made more delicious by the bottle of good friend Aljocha Goldschmidt’s Chianti Terre di Corzano 2004 which, by the way, is just a beautiful wine – supple with scents of cherry and spice, and silky textures. Pork and Chianti (along with a healthy dose of olive oil) are just a perfect pairing. Cooking for one’s wife with a good bottle of wine, is just about as good as it gets.
